80 years ago Dr. E.P. Joslin, founder of the famous Joslin Diabetic Center in Boston, suspected a high-fat, high-cholesterol diet might favor the development of diabetes.

He made a prophecy when he said:" I believe the chief cause of premature atherosclerosis in diabetes, save for advancing age, is an excess of fat, an excess of fat in the body (obesity), an excess of fat in the diet, and an excess of fat in the blood. With an excess of fat diabetes begins and from an excess of fat diabetics die, formerly of coma, recently of atherosclerosis."

So why do a diet that is high in fat and low in fiber give us this disease?

One of the purposes with insulin is to put fat into fat cells. This function was/is necessary when there were risk of starvation and in our economy this is not very likely to happen in quite some time. But this is a process that has evolved during thousands of years. If you eat more fat or calories your body will want to save this for the next rainy day.

In an average diet we consume too much of unhealthy foods and fats and too little vegetables and fruits. Our body aims at saving. Finally when our storages are full (when we are overweighted or obese) the individual fat cell start to become resistant to the insulin because it can not store any more fat. This slows down the storation and sometimes it even comes to a complete stop.

Our body continues to adapt to the diet that is high in fat hence it will finally be resistant to insulin and the blood sugar levels increase. When the blood sugar level is high enough our kidneys can't hold back and sugar will 'spill over' into the urine. You now have a condition called diabetes mellitus. (Mellitus comes from the sweet tasting urine).

In todays stressed lifestyles it is hard to maintain a healthy diet and to reduce the intake of fat. We eat a lot of processed foods and this means that most foods, like vegetables etc, have lost most of its nutritious value and processed foods often contain a lot of fat.

I don not even dare to speak about the different fast food restaurants.

If you are serious about lowering the risks of getting diseases related to obesity there are a couple of steps to take in order to do some minor changes on your lifestyle.

First of all, do not eat processed foods. Buy fresh vegetables to make sure you get a healthy diet. Reduce meat that holds much fat, eat lean meat instead.

Secondly, start to exercise by walking. For example, instead of parking your car next to the entrance of the shop, park at the far end instead. I know lots of people that do exercises when, for example, cleaning, hanging clothes up to dry and so on. Small changes is the key.

Thirdly, during the transition from an unhealthy diet to a healthy one, it helps to take drugs that prevent your intestines from absorbing the dietary fat.
