Country Sesame Rye Loaves Recipe - For Diabetic Friends Who Are Seeking For Low Carb Diet

The combination of bread flour and rye makes a rich yet light loaf.

Ingredients:

1 ½ cups warm water (110 degrees)

1 teaspoon sugar1 package active dry yeast

2 teaspoons toasted sesame oil

1 ½ teaspoons toasted sesame oil

1 ½ teaspoons salt

3 to 3 ½ cups bread flour, divided

2 cups rye flour, divided

vegetable cooking spray

1 tablespoon sesame seeds

Method

Combine water and sugar in a large mixing bowl; sprinkle yeast over water and let stand 5 minutes. Stir until dissolved. Stir in oil. Mix in salt, 1 cup bread flour, and 1 cup rye flour, one cup at a time, with an electric mixer on low speed, until blended. Stir in remaining 1 cup rye flour and 1 ½ cups bread flour, one cup at a time, until dough becomes difficult to stir.

Turn dough out on a well-floured surface and knead, gradually incorporating more bread flour as necessary to prevent sticking, about 10 minutes or until dough is smooth and slightly elastic. Place dough in a large bowl coasted with cooking spray, and coat evenly with cooking spray. Cover with cloth or plastic wrap and let rise 1 ½ hours in a warm place, until about doubled in volume.

Preheat oven to 400 degrees.

Punch dough down; divide into four parts. Shape each part into a seven-inch loaf; place on two baking sheets, and make a ½-inch-deep slash down center of each loaf, beginning two inches from ends of each load. Coat with cooking spray, and sprinkle evenly with sesame seeds. Cover loosely and let rise in a warm place 30 to 45 minutes, or until almost doubled.

Liberally mist loaves with water before placing in lower third of oven. Bake 10 minutes; open oven door and mist bread again. Reduce oven temperature to 375o and continue baking 12 to 20 minutes or until loaves sound hollow when tapped on bottom Let cool on a wire rack.

Per serving(1/4 of a loaf): 28 g carbohydrates, 140 calories, 1 g fat (0 g saturated), 0 mg cholesterol, 170 mg sodium, 4 g protein
