I don't know about your family, but mine can present some difficulties when it comes to choosing foods that are healthy. Out of the four of us, three are devout fish haters, two do not like most vegetables and one never saw a tomato she liked. That puts quite a dampener on my efforts to promote healthy eating. However, I have found ways around it.
Fruit and Veggie Tray: Instead of popcorn, I like to set out a platter of raw, fresh fruits and vegetables. They are cut into bite sizes, and a fat free salad dressing is available, as well as peanut butter for those who like it on their celery. They might avoid it served at the dinner table, but having it in the living room while the favorite show is on finds them happily munching away.
Pizza Sandwiches: Almost everyone loves pizza, especially when it's loaded with cheese, pepperoni and....fat. However, you can get around the excess calories, and it isn't difficult or expensive to make. If you have a sandwich maker, it's even easier. Just get some low fat cheese, sliced tomato, fresh basil and dice up whatever veggies you enjoy on a regular pizza. You can even place four or five slices of pepperoni on it. That's about a third of a serving, so fairly low in the bad stuff. Grill it, and munch away.
Salmon Pate': As I mentioned, I am the only fish lover in the family. Salmon is the least liked of them all, because it has such a strong flavor. However, this is approved by all in the family. Fat free mayo, Clausen's sweet pickle relish, roast or smoked salmon, a bit of onion, cucumber, dill and capers are the ingredients. Toss them into a food processor and serve with bread or crackers.
Whole Grain Pretzels: There are many good pretzel recipes on the web, but I've found that if I mix some whole grain wheat in with the regular flour, the taste remains the same but the fiber content skyrockets. Let me add that if you have a bread machine, making the dough is even easier, because you can run it through until the time comes to bake it. If you've never handled dough right out of the bread machine, let me add that you should put some flour on your hands before you try it. If not, you will have dough all over the kitchen.
While it may take some effort on your part, there are plenty of ways to subtly insert tasty low cholesterol foods into your diet. You may do what I do, and experiment until you find some that work for you. I'm still adding recipes to my repertoire, and you can, too.
