Low Fat Dishes Your Taste Buds Will Thank You For

Fat-Free Chicken Creole Recipe

Ingredients

4 skinless, boneless chicken breast (cut into 1 inch long strips)

1- 16 oz can of diced tomatoes

1 cup green peppers (chopped)

3/4 cup no salt chili sauce

1/2 cup celery (chopped)

1/2 cup onion (chopped)

2 cloves of garlic (minced)

1 tablespoon fresh basil flakes

1 tablespoon fresh parsley

1/4 teaspoon crushed red peppers

Non stick low-fat cooking spray

Preparation

Spray a deep skillet with just enough of cooking spray to cover the bottom and sides.

Allow the skillet to get warm for 2-3 minutes.

Cook the chicken strips in the skillet for about 12-15 minutes or until all the pink color is gone.

Add the chopped tomatoes with juice, chili sauce, onion, spices, salt and bring the tomato mixture to a boil. Reduce heat, cover the skillet and cook the tomato chicken mixture for 15 minutes.

Serve this dish with a fresh green salad and a nice dish of brown rice. Serves 4

Garlic Roasted Chicken

Ingredients

4 skinless, boneless chicken breast

2 tablespoons extra virgin olive oil

3/4 cup of salt free chicken broth

3 garlic cloves (minced)

2 teaspoons of oregano

2 teaspoons of chili powder

1 teaspoon of ground cumin

1 teaspoon of onion powder

Preparation

Preheat the oven to 400 degrees

In a medium size mixing bowl combine all the ingredients except the chicken and broth (which is already in your pan) mix the ingredients well.

Dip each chicken breast in the mixture and coat well

Place each breast in the baking pan and bake for 45-50 minutes.

Serve with rice pilaf and a green vegetable of your choice. Serves 4

Chocolate Mouse

Ingredients

1 box of fat free chocolate pudding mix

3/4 cups of low fat, skim milk

1/2 cup of fat free cool whip

Preparation

Prepare the pudding according to directions on the box, using the 3/4 cup of low fat skim milk in place of the milk suggested on the box.

Beat for 2 minutes with an eclectic mixer or whisk. When the pudding is the consistence you like, add the cool whip and stir.

Scoop out 4 individual servings into small bowls, cover with plastic wrap and refrigerate for one hour. Serves 4.
